# Rezepte

I am part of Solidarische Landwirtschaft (SoLaWi) Spörgelhof eG[1].  These are
some recipes I use with the vegetables I get from the farm.

## Risotto mit Radicchio

Preparation: 30 minutes 

### Ingredients

- 1 Radicchio i.e. about 250 g 
- 400 g of rice (I got the Risotto Reis Ribe from Alnatura)
- 1 onion 
- 1,5 L mix of broth
- 150 g of grated Parmesan, more is okay
- 50 g of butter 
- Salt
- the original recipe had red wine which I skipped

### Instructions

Clean and dry the radicchio's leafs and cut them finely into stripes.  Cut the
onion finely and heat it softly with the butter.  When the onion is brown, add
the radicchio, salt, and mix everything.

Add the rice in the pan and mix it with ingredients.  When the rice is
translucent, start adding the broth - just a bit so that the mix is immersed
(not submersed) - and stir so that the broth spreads evenly.  Wait until the
rice has absorbed the broth, and repeat i.e. add a bit of the broth, mix, etc
until the rice is cooked (15-18 minutes).

Grate Parmesan.  Mix.

Let it sit for a few minutes. Serve.


## Apfel mit Zimt, körniger Frischkäse, Mandel und Müsli

Preparation time: 7 minutes

- 1 small Apple (or 1/2 of a big one)
- 1/3 of the körniger Frischkäse Burcher, i.e. ~ 80 grammes
- 6 tablespoons of muesli
- a pinch of cinnamon
- 5 almonds

Cut the apple into two.  Place the apple pieces flesh-side down on a cutting
board.  Slice them finely ~3-4mm.  Pour a shot of water in a small pot, a pinch
of cinnamon and the slices of apple.  Cover the pot and heat gently for ~5
minutes until the apple are soft (not mushy).  Cut the almonds into small
pieces.  In a bowl, pour the muesli, Körniger Freshkäse, the apples - with the
leftover water, - and add the pieces of almonds on the top.

You can also add honey.

Also works with ricotta.
